With her feet firmly planted in the best of Mediterranean cuisine, especially that of the Levante and Cataluña, María José creates an enviable fusion between her passion for nutrition and simplicity in cooking with the sensations and flavours of her work and studies world-wide. Inevitably, being in the region where rice is king, there are a small number of rice dishes on the menu, including the wonderful arroz meloso (sticky rice) with red prawns and black truffle from Castellon. The cold cucumber soup with kiwi and cumin sounds a strange concoction but is superb, and the baby roast churra lamb with gorgonzola cheese and celery was knock-your-socks-off delicious. My chocolate and hazelnut sponge soaked in coffee with rum cream lingered on my tongue – but sadly, not for long enough. Not surprising, given the name, the list of over two hundred wines has a fine selection based on the monastrell grape.
