Under the direction of Basque chef Martín Berasategui, Santo Restaurant won its first Michelin star this past November (2010). Offering chic and simple Mediterranean cooking in a minimalist and elegant setting, using seasonal and fresh market products, this is a great choice for a special occasion dinner.
There are two or three set menus available each day, based on what was fresh at the market, and the dishes are uniquely prepared without being masked by superfluous sauces. Tasting menus offer 8 dishes and are an excellent way to get a good selection of what the restaurant has to offer.There is a small but carefully chosen wine cellar.
It's minimalist yet inviting, with glass floors that allow patrons to enjoy views of the Roman ruins lying beneath the hotel and restaurant.
The service is attentive and serious - it could perhaps lighten up a bit.
A stone's throw away from the cathedral, it's a perfect central location and easy to get to.
Expect to pay between 60-75 euros per person. Wines start at 14 euros a bottle. Tasting menus are available at 85 euros.
