Vegas isn’t the kind of place you associate with responsibility so this restaurant – owned by celeb chef Rick Moonen – is a breath of fresh air. Fantastic food, that’s all been sourced sustainably – this is probably the best seafood restaurant in the city, and it’s definitely my favourite. Even better, it's split into two restaurants - upstairs and downstairs - to cater for different budgets.
As the name suggests, it’s predominantly seafood although, perhaps ironically, the burgers are meant to be phenomenal as well (I've never tried one). Fish-wise, there's everything from crab cakes and mussels for starters, to shrimp risotto and lobster rolls for the main courses. Food is cheaper downstairs than upstairs, and there are prix fixe and a la carte menus for both sections of the restaurant.
Relaxed but dressy. A friend of mine plays in a show at Mandalay Bay, and this is his favourite place to eat afterwards - the friendliness matches the food quality.

In Mandalay Bay, which has a top notch restaurant scene. It’s technically on the Strip, but it’s a little south of the action.
Downstairs, mains start from US$13 for lunch, US$22 for dinner or the prix fixe dinner menu costs US$55 for three courses, which is great value. Upstairs, it costs more: mains from US$38 for dinner or a five course prix fixe menu for US$75.
