Quite a few Hong Kong chefs have made a name for themselves in hotels, and then gone on to open their own restaurant. Umberto Bombana started out at The Ritz-Carlton, and rather than resting on his laurels capitalised on them with this, his personal paean to all (Italian) things bright and beautifully edible.
To give you a vague outline - there is a cellar crammed with vintage vino; an ageing room equally full of imported meats and cheeses; truffles (in season) peeled at your table.
It's glitzy and glamorous. Italian is Hong Kong's most popular "foreign" food, and they come here every night to pay unqualified tribute.
This is one of those regrettably all too rare restaurants where only some time afterwards do you stop yourself and say "Wow, the service was amazing too".
It's difficult to get more Central - on top of the MTR and a cruet-toss from Statue Square.
If it's a romantic celebration, sort out who's paying first. A conservative estimate is HK$1,000 per head.
